Roast With Magic Sauce

  I usually go to great lengths to prove to the world that I’m not broken.  It’s pretty typical for me to push myself beyond my limits just to show everyone that I can do what everyone seems to think that I can’t.  That said, even I have my limitomatoests.  For me, it’s all about tomatoes.  I’m thinkin’ whoever came up with the idea that they were poisonous ‘back in the day’ had the right idea.  Seriously – gag me with a 1980’s pitchfork!  

That said, it truly drives me crazy that I loathe them so much  It messes with my head that I have such an aversion to them when the rest of the world can’t seem to get enough of them.  So, I’ve been trying REALLY hard to overcome my disgust. I have it burned into my brain that there’s going to come a day when SHTF (Stuff Hits The Fan) and the only food left will be tomatoes.  Then, it boils down (no pun intended) to me or them!  Can you imagine how embarrassing it would be to die from starvation because I wouldn’t eat a stinkin’ tomato?  My kids would totally make sure that legacy followed my memory forever!

Luckily, I’ve come up with a sauce using tomatoes that is just plain…magic!  I’m (probably overly) proud to say that I can eat it pretty much on anything!  Eggs, potatoes, meat…you name it!  Okay, except ice cream and other sweets.  I’m still smart enough to know that, even if a tomato IS considered a fruit, there are just some things that would be a total insult to any human taste bud. 

Have to admit that it is pretty sweet, though.  Like a sweet barbecue sauce-type flavor.  If you’re not into the sweet, feel free to cut the sugar a little.  Or use honey or any other sweetener you’d like.  I won’t judge!  So what is this magical blend that has me so enamored?  Here goes…

FOR THE ROAST:

1 large or two small roasts (You can use any size of beef or pork roast for this)
1 TB oil
1 can Cream of Mushroom Soup
1 package onion soup mix


  Lightly brown the roasts on all sides with 1 tb oil in large skillet to ‘sear’ them.  (This will help retain the color and juices).  Then, put 1 c water in bottom of a crock pot.  Put roast into water.  Cover with 1 can of cream of mushroom soup (or use  equivalent home made version of soup).  Sprinkle with onion soup mix, and cook on low for 6 hrs.  When it’s done cooking, place on plate and let it sit for about ten minutes.  If you cut it right away, all the yummy juices will drain out and you’ll have tough/dry meat – even if it’s cooked in the crock pot. Top with Magic Sauce below:

Magic Sauce

3 LBS chopped tomatoes
1/2 LB pitted plums
1 3/4 cups granulated sugar
1/4 cup freshly squeezed lemon juice
1 TB freshly grated ginger
1/2 TB red pepper flakes
2 tea salt
1/2 tea cinnamon
1/2 TB cumin

Combine all ingredients in a blender and puree until smooth. Pour puree into heavy-bottomed pot and bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer until the mixture reaches a thick, jam-like consistency. Stir occasionally.  Ladle the hot sauce into hot sterilized jars, leaving 1/4-inch headspace. Water bath 15 minutes.

If you don’t have plums, use pureed plum baby food.  Don’t worry – it will be our little secret!  When you’re ready to eat it all put together, this is what it will look like.  Feel free to eat it as-is or throw it on buns or rice to make a complete meal.

  1. The reason so many thought tomatoes (aka love apples) poisonous is because of the chemical reaction they had with pewter dishes. If you use wood or ceramic dishes, no reaction.

    Frankly, there are some foods our taste buds just will not like. In most cases, we can find a way to prepare the food so it’s palatable to us, such as what you’ve done with the magic sauce, but there are times we just can’t. For those food items, if we are in a shtf scenario, i’ll have to hope i’m with others who LOVE whatever food it is I detest, and that they’ll trade me for something I like.
